Carob Almond Cookies

1 1/2 Cups ground Almonds
3/4 Cup softened Butter
1 Cup Spelt or Whole Wheat Pastry Flour
1/2 Cup Rapadura or Organic Sugar
1/2 Cup Carob powder
2 tsp. vanilla or almond extract
1/2 tsp. Sea salt

Grind almonds in a food processor, add the remaining ingredients and process until everything is well blended. Form the dough into balls, place on a cookie sheet and flatten slightly with a fork. Bake at 300 degrees for 20 minutes. Let cool completely before storing in an airtight container.
